Our Sauces

We don't rush, dilute, or mass-produce. Every bottle is the child of a minimum 8-week lacto-fermentation of Mexican chillis, scotch bonnet peppers and sweet veggies that develop deep, complex flavours, smooth heat, and naturally probiotic qualities.

We aim to elevate your meals and support your gut health.

NATURALLY ALIVE FLAVOUR

No one does scotch bonnets like us. Our fermentation process doesn't just add tang - it builds richness you can't fake with vinegar and sugar. More time in the chamber means more depth in the flavour.

Charcoal Barbecue

Oaxacan mole negro-inspired sauce. This is a labour of love of grilled chillis, seeds and spices blended and simmered with the Soft Lad lacto-fermended base.
Flavour notes: Deep, complex, earthy smokiness with layers of heat and lingering aftertaste.


Spicy Harissa

Inspired by North African classics, our Spicy Harissa blends the Soft Lad fermented base with tomatoes, paprika, caraway, and coriander.
Flavour notes: Smoky, tangy, and layered with a slow-building warmth that lingers on the palate.


Kimchi King

A Korean-inspired kick, mixing a traditional kimchi ferment of red cabbage and Gochugaru red chilli flakes with our trademark Soft Lad lacto-fermented base.

Flavour notes: Sharp, vibrant, and fermented tang meets umami depth.


Mango & Pineapple

A tropical, fiery, citrusy and fresh remix of the Soft Lad lacto-fermented base, with juicy mango, sweet pineapple, and fresh lime, mint & coriander.
Flavour notes: Fruity sweetness, balanced by tangy fermentation and sharp zest, finishing with a gentle heat.

Our story


Soft Lad Sauces was born out of cooking course in Oaxaca where I learned how to unleash different flavours from masters of the craft.

Every batch is fermented, blended, simmered, and bottled by hand in my kitchen.
We only do small batches to keep quality and consistency high. Every bottle is personalised.

We aim for big flavours to complement meals that deserve better than supermarket condiments.

Based in Finsbury Park/Crouch Hill (N4). Local delivery in North and North East London.
